English Dark Mild

Makes: 5 gallons

Ingredients:
4 lb. Pale Ale malt
1/2 lb. English Crystal malt, 60 lovibond
1/2 lb. Chocolate Malt
1/4 cup of dark brown sugar
2 lb. light dry malt
1 oz. of 4.3% AAU Fuggles
Yeast: Wyeast 1056 (American Ale)

Method:
Mash the above at about 155° F for about 30 minutes. Collect 5 gallons of wort (note: this may be a little too much, as the ale was slightly astringent).

Add 1/4 cup of dark brown sugar, 2 lb. of light dry malt. Boil for 70 minutes. Hops: 1 addition, 1 oz of 4.3% AAU Fuggles, for 60 minutes. Yeast: Wyeast 1056 (American Ale) with a starter.
