Bahamian Style Ginger Beer

I came up with this when I first got my kegs and CO2 equipment. It worked well for me. You probably want to keep the stuff cool or cold and use it up fairly soon -- if you were to get any yeast contamination into the bottles, you could have some explosions.

Makes: ?

Ingredients:
1 lb. ginger root
3 1/2 cups sugar
Juice of 1 lemon
1 gal. water

Method:
Peel ginger root and slice thin. Place in food processor or blendor along with 1 cup of water and blend to a paste. Add, along with rest of ingredients for a large (8 quart) pot. Bring to a boil and simmer gently for 15 minutes. Strain, bring to a boil again, and simmer for 5 minutes. Chill. Force-carbonate to about 2.5 volumes of CO2. Bottle in sterilized bottles.
