lbs. Munton & Fistons Light Malt Extract
3 lbs. M&F Extra-Light DME
1/2 lb. Caramel Malt
1/2 lb. Munich Malt
1 1/2 oz. Challenger Hop Pellets (0 min.)
3 oz. Fuggles Hop Pellets(40 min.)
1 tsp Irish Moss (45 min.)
1 1/2 oz. East Kent Goldings Hop Pellets(60 min.)
White Labs British Ale Yeast
Heat 2 gallons of water to 150 F, add crushed grains in grain bag & put
in oven for half an hour on Warm. Sparge grains with 1 gallon of 170 F
water. Turn up heat to boil this pot. I then added 2 gallons of water
to a second pot, steep the grains in this pot for a few minutes, then
toss the grains. )Bounce the grains in & out of the water to get more
sugars.) Bring both pots to a boil. When the 'concentrate' boils, add
the hops & Irish Moss as directed. The second pot, boil for 10 minutes,
cool to 70 F & add to carboy. Add the yeast to this 'weak' malt solution.
When finished boiling the 'concentrate', cool to 70 F & add to carboy.
This should start to bubble quite quickly. Ferment for a week or til fermentation
stops & either bottle with 1 cup water & 1 cup DME. Boil quickly to sterilize.
If kegging, rack into secondary for 7 - 10 days, then keg.
