Sawitzke "Sierra-like" Pale Ale

Makes: 5 gallons

Ingredients:
1.5 lbs 60L crystal
6.5 lbs light malt extract syrup
2 oz. Perle hops
1.5 oz cascade hops
1 oz cascade hops
Wyeast 1056
1 oz cascade hops
1/2 cup dextrose

Method:
1. Steep 1.5 lbs 60L crystal for 30' in 1 gallon 170°F H2O
2. Sparge grains with 2 quarts 170°F H20 into 2.5 gallons boiling H2O
3. Once boiling again, add 6.5 lbs light malt extract syrup
4. Once boiling again add 2 oz. Perle hops (alpha = 5.9%)
5. boil for 30' then add 1.5 oz cascade hops (alpha = 9.4%)
6. boil 20' then add 1 oz cascade hops
7. boil 10' more then chill with wort chiller to pitching temp and bring to 5 gallons.
8. Pitch with Wyeast 1056
9. when rack beer in about a week, dry hop with an additional 1 oz cascade
10. Bottle with 1/2 cup dextrose.
